The Refuge, San Carlos

You might think I’m starting to loose it. First Beard Papa’s, now a pastrami joint- what’s happening to my Italian review site?? Well, just as I defend the Beard Papa’s choice, I am also adamant in making sure you don’t miss out the dining experience at The Refuge. Sure, Italians have never heard of pastrami, but salumi, charcuterie? We know something about that!

So, the salumi at The Refuge. Not to miss out! first of all, the place has the feeling of an Italian osteria, an informal meeting place where you can grab a glass of wine or snack on homemade food. The salumi on the mix platter choices are all fantastic- when they are not house cured, they are selected among the best products available on the market! I have tried a dried salame that was truly impressive, and the menu shows finocchiona (fennel salami), prosciutto di parma, a salame with porcini mushrooms and also Pecorino Romano- all served a’ la carte according to your preference, with the addition of wonderful giant capers of Pantelleria. What’s not Italian about that?
