Fish., Sausalito
Last time I was at Fish. (it’s really the name- Fish., Fish period!) I spoke to one of the chefs that are always busy in the open floor kitchen. I was complimenting him and his staff for the amazing quality of the food, and his reply was “We just take excellent ingredients, and we try not to ruin them.” That settled it for me!
Fish. prides itself in its philosophy of quality and sustainability. Most of their menu is locally sourced, seasonal, and the practices of gathering are sustainable socially and environmentally. In all, not only does the food taste amazing, but it’s also good for the world! There is no table service- you order at the counter, pay and get a number. The dishes will then be brought to your table. The line is often long during weekends, even at weird hours like 3:30pm! Also, expect a check to run about $30 to $35 a person- it might seem steep for such an informal dining environment, but it’s worth every penny!
One of the kitchen manager is called Francesco Torre. Francesco is from the seaside Tuscan city of Massa, and he’s a master in his own trade. He took a demotion from Executive Chef at Tra Vigne in St. Helena to work at this amazing place. If you’re lucky, he’ll have done fresh mozzarella, and mozzarella in carrozza (a delicious dish that taste like childhood to me- mozzarella and anchovies sandwiched in bread, dipped in egg batter and then deep fried) will be a side dish on many of the day specials. There is another kitchen manager/ chef who has trained in Italy, and speaks fluent Italian- it should not come as a surprise, then, that even if this place is not an Italian eatery, the food they serve really appeal to Italians!
Pick your meal from the daily specials on the boards. I am always partial to those fishes that are not readily available in average restaurants. Monterey sardines, for example- why are they so hard to see on menus? Well, not at Fish.- they serve Monterey sardines pretty much every day, on sandwiches, salads, or (my personal favorite) on pasta. If time allows, the Fish. staff will actually make fresh pasta! Yummy!
We also ordered a dish of clams and mussels in white wine and garlic sauce- just the way coastal cities in Italy make their cozze and vongole alla marinara! Delicious!
There are a few things that add on to the Sausalito Fish. experience. Among them, the boards with the amazing daily specials, the super-fresh fish, the fresh oyster bar, and- of course, the beer jars!
